Pork Lettuce Wraps

Pork mince can be used for different types of meals such as preparing meatballs, fillings for wonton soup, patties etc. Hence its versatile.

This recipe of adding greens in your everyday diet is a healthier choice. Pork mince goes very well with lettuce with a juicy intense flavor of sweetness, spiciness and tanginess. I would definitely make my lettuce wraps often as it is less time-consuming and also a great idea to make use of greens.

 

 

Preparation time – 15 minutes

Cooking time – 35 to 40 minutes

Serves: 4+

Ingredients

Pork Mince – 500 g

Lettuce – big bunch

Cumin / jeera seeds – 1 tsp

Onion – 1 large, finely chopped

Garlic cloves – 4 large, finely chopped

Ginger – 1 inc long, finely chopped, same quantity as garlic

Tomatoes – 2 medium, finely chopped 

 

Cumin powder – 1/4 tsp

Coriander powder – 1 tbsp

Garam masala powder – 1 tsp

Pepper powder – 1 tsp

Chilli powder – 1 tbsp

Carrot – 70 g , medium size peeled and grated

Green / Red bell pepper (paprika) – small, finely chopped 

Nandos Peri-Peri chili Sauce (mild) – 3 tbsp, choice of spice level

Tomato ketchup – 1 or 2 tbsp depending on sweetness

1 large Lime for garnish (RECOMMENDED), cut into quarter slices

 

 

 

Directions

Initially prepare the first 6 ingredients and leave the rest for later to save time.

1. Heat a large wide saucepan with olive oil on medium-high heat and toss in the cumin seeds. Fry for a minute then add onion and fry till translucent.

Meanwhile you can start preparing the carrot and peppers while the onions cook.

2. Add chopped garlic and ginger. Fry for a few seconds on medium-high until the raw smell goes away. Add chopped tomatoes and pinch of salt. Stir fry until the tomatoes get cooked and slightly mushy (adding salt makes  the process of cooking tomatoes slightly faster).

3. Add mince pork and all the spices such as cumin, coriander, garam masala, pepper and chilli powder. Mix and stir-fry for 3 – 4 minutes on high heat turning them slightly brown.

4.  Add nandos sauce, Mix. Toss in bell peppers and shredded carrots. Mix and Cook for another few minutes.

Lastly, drizzle some tomato ketchup. Mix well and let it soak in the juices for another 2 minutes. Turn off heat.

5. Clean and wash the lettuce leaves 5 to 7 large leaves or if the leaves are small combine 2 leaves. Dry them with a kitchen towel and spread the pork mince over the leaves.

Drizzle generous amount of lime over the minced pork and enjoy. Garnishing with lime gives it a distinct tangy, spicy and sweet flavor which I really enjoyed.

Serve it as a side with rice or have it as an appetizer.

Sweet Chilli Prawns

I know there are many ingredients that include in Sweet Chilli Prawn recipe, but not all are required. You can still prepare this recipe with few sauces like the soya sauce and tomato sauce. They are always in my pantry for delicious stir-fry dishes as these.

This dish is mildly spicy, and in order to find these ingredients, the first place I recommend is your local international food market. The key ingredient for the spice in my recipe is the red-chili paste. It can turn up the heat and can be used for any seafood recipes like fish, prawns, squids etc.

 

 

Preparation time: 15 minutes (excluding cleaning prawns)

Cooking time: 25 minutes

 

Ingredients

Large prawns – 250 g , tips & legs removed

Ginger – 1 inch, finely chopped

Garlic – 2 big. finely chopped

Onions – 1 medium, chopped

Red pepper/Bell pepper – 1, cut into 1 inch

Spring onion (whites & greens) –  1/4 cup, set aside for garnish as well

Pepper powder – 1 tsp

Red chili paste / Red chili powder – 1/2 tsp

Vinegar – 1 tsp

Salt – 1/2 tsp

Tomato sauce – 1 tbsp

Sweet chili sauce – 1 tbsp

Light soya sauce – 2 tbsp

Cornflour mixed in 1/4 cup of water

 

For Marinade:

Ginger-Garlic paste – 1 tsp

Kashmiri red chili powder – 1 tsp

Salt – 1/2 tsp

Egg – 1

Light soya sauce – 1 tbsp

Cornflour – 3 tbsp

 

Directions

1. Season the prawns with the ingredients under marinade: ginger-garlic paste, red chili powder, salt, egg, soya sauce and cornflour. Mix and set aside for 15 – 30 mins.

In the meantime, prepare the rest of the ingredients.

2. Toss the prawns in a heated pan of olive oil. Stir-fry for 4-5 mins on high until they are lightly brown. Remove from and set aside in a plate.

3. In the same pan with 1 tsp of oil. Put ginger and garlic and stir-fry for 1 min on high. Add the onions and fry till it turns translucent. Add red peppers, spring onions, pepper powder. Mix together.

Now, add all the sauces and pastes except for cornflour. Mix together and fry for 2 minutes.

4. Add prawns and cornflour liquid. Reduce heat to medium and stir again gently to coat. Cover and cook for 2-4 minutes keeping an eye.

Vegetable Chili Paste

Vegetable Chili Paste is commonly prepared by my mom at home to give a good flavor and aroma to the dish. Its also known as meet-mirsang masala (chili paste) to us Mangaloreans living in the coastal region.

We grind the ingredients to a fine thick paste and store it in a small bottled container in the fridge. When preparing vegetarian dishes, just add the required amount of the chili paste needed based on your spice level.

Veggies that can be prepared with this chili paste for dry gavy dishes:

  • Yam- Elephant foot / Soorn (konkani)
  • Chickpea (any kind of chickpea) / Bengal gram / Garbanzo : soaked in water overnight before cooking
  • Raw banana plantains

Ingredients

Red dry Kashmiri Chilies – 15 

Coriander Seeds – 1 tbsp

Cumin / Jeera seeds – 1/2 tbsp

Mustard seeds – 1/2 tbsp

Garlic cloves – 4 large

Black Peppercorn seeds – 12

Pinch of turmeric powder

EDIT:

1. Grind all the ingredients with little amount of water into a fine paste using a blender ( smaller container the more finer paste). The paste must be thick and not watery.

2. Store in a sealed container in the fridge and use some amount when preparing dry vegetable dishes.

Note:

*Make sure to use the paste withing a few weeks. You can also portion them in small zip-lock bags with name tag and freeze. When you plan on making it thaw or defrost them few hours before preparing the dish.

Fish Fry Chili Paste (Meet-Mirsang)

After all that I have eaten while I was back home, I’m excited to bring back a few recipes to satisfy the cravings of having a delicious, spicy seafood fry.

Fish chili paste is made out of the most common spices that are available in almost every local Indian supermarket. It is popular in the coastal regions of South-India prepared differently in different regions. Chili paste is exactly what it sounds like: the spicy tangy flavor. This recipe is always used in my mom’s kitchen and comes in handy for every fish I want to fry.

Initially, I used to start coating my fish with a paste of chili powder, a pinch of turmeric and salt which had a less intense flavor that got me thinking there was something missing. I then made up my mind and prepared this paste which I should have tried long before, and now everytime I fry my fish with this paste it takes me back home where the aroma of the spices fills the air and spreads the spicy blend to the Olfactory system and the liquid across your palate – Mouth Watering!!

Preparation time: 5 minutes

Appliance required: Blender

Ingredients

Red Kashmiri dry chilies – 32 g / fist full

Black pepper seeds – 1 tsp

Cumin seeds / Jeera seeds – 1/2 tsp

Salt – 1 tsp

Vinegar – 2 tbsp

Turmeric – 1/4 tsp

 

Directions

1. Prepare the ingredients. Combine all the ingredients in a blender, preferably in a small sized container so as to grind it into a fine paste. Add very little water if its very dry.

2. Grind into a thick fine paste. Transfer it into 200 ml or 200 g glass jar. Store it in the fridge.

3. Marinate 1 tbsp of chili paste on fish, either whole fish or pieces. You can adjust the amount of paste based on your spice level. Sprinkle just a pinch of salt over fish since the paste already contains some amount of salt.

4. Let it sit for a couple of minutes, longer the better. Shallow fry the fish in a pan.

 

You can fry any lean fish which are available in wide varieties. Fish that are commonly fried with this paste:

Mackerel (Bangude)

Sardine (Tarle, Boothay)

Ladyfish (Kane)

Pompfret (Maanji)

Coat each fish piece with the chili paste

Spicy Banana Pepper Fritters

These Hot Chili Peppers which are commonly known as ‘Banana Peppers’ is named because it resembles the shape of a banana. It is 6-inch-long pepper, mild hot because of its seeds.

These banana pepper fritters are easy to make in less than 30 minutes. My husband wanted it spicy so I haven’t removed the seeds in my recipe. If you cannot take the spice, I recommend slicing the pepper vertically through the center and removing the seeds before coating with the chickpea flour.

Preparation time: 5 minutes

Cooking time: 20 minutes

 

Ingredients

Vegetable oil for deep frying

Banana peppers – 7 (spicy)

Chickpea / Gram flour (Besan) – 1 1/2 cup

Kashmiri Red chili powder – 1 tbsp

Salt – 3/4 tsp

Turmeric powder – 1/4 tsp

Water – 3/4 cup

 

 

Directions

1. Prepare a paste by adding all the ingredients: flour, chili powder, salt, turmeric. Add 3/4 cup water and mix to form a thick paste. Add more water if necessary, the batter must be thick.

2. Coat the peppers with the above chickpea mixture. Place it separately on a plate.

3. Heat a deep-wide-bottomed container with 2 inch vegetable oil set at medium for deep frying.

Once its hot enough. Carefully place the peppers in hot oil. I fried 2 at a time in batches.

4. Fry on each side for 2 mins until they turn brown. Transfer and drain into paper towels.

5. Serve with coriander chutney, ketchup or can just be enjoyed plain with an evening cup of tea.

Spicy Chicken Recipe

This Spicy Chicken recipe uses a hot chili pepper called “chili padi” (bird’s eye chili) commonly used in the Malaysian Cuisine. It is also called as Kung Pao Chicken, a spicy stir-fry dish made with chicken, peanuts,vegetables and chili peppers.

Preparation: 10 minutes

Cooking time: 15 – 20 minutes

Ingredients

Chicken – 250 g, cut into 1 inch cubes or smaller

Egg white – 1

Ginger-Garlic paste – 1/2 tsp

Peanuts – 20 g

Garlic – 2 cloves, minced

Red chili padi- 2, chopped

Cucumber – 1, chopped into 1 inch size

Chili powder – 1 tsp

Sesame Oil – 1 tbsp (optional)

 

For the sauce

Chicken stock – 1/2 inch cube

Soya sauce – 3 tbsp

Sugar – 1/2 tbsp

Corn-starch powder – 1 tbsp

Water – 1/2 cup

 

Directions

1. Prepare the ingredients and the sauce. Marinate the chicken with egg white, ginger-garlic paste, mix and set side for 15-20 minutes.

Heat the wok with 1 tbsp oil and fry the peanuts for 2-3 minutes. Set it aside on a plate.

2. Using the same wok with oil. Add garlic and red chili. Fry for half a minute until you get the fragrant smell of garlic.

3. Add the chicken cubes, stir, then add the sauce. Stir fry until cooked.

4. Add the cucumber, 1 tsp chili powder, sesame oil and peanuts. Mix and cook for 1 minute.

Can be served as a side.

Note:

*The smaller the pieces of chicken the better.

*Step 4: I cooked the chicken for 15 minutes as I used a stainless steel wok. If you’re using a non-stick stir-fry pan, you just need to stir-fry until cooked.

*Red chili padi is very hot. If you want it mild hot or less, remove the seeds before frying.
