Creamy Chickpea Curry

For decades, my secret weapon for a quick, delicious vegetarian meal has been chickpea curry. Chickpeas, also known as garbanzo beans, are a type of legume that is widely cultivated for its edible seeds. They are one of the most popular and nutritious plant-based foods, commonly used in various cuisines worldwide. It’s perfect when I’m short on time but craving something hearty and flavorful.

Chickpea curry comes together with just a handful of basic spices and a splash of whipping cream for a luxuriously creamy texture, making it absolutely perfect to enjoy with fresh bread. You can either cook the chickpeas yourself or pick up a jar of ready- cooked chickpeas (known as Kichererbsen in German) or bought from the bigger supermarkets.

I always keep a stash of uncooked chickpeas ready to go. When I’m planning meals for the week, I soak them for a few hours and then use my amazing mini pressure cooker to have them perfectly cooked in under 10 minutes.

How to cook Chickpeas?

  1. Rinse and Soak:
    • In a large bowl, rinse the chickpeas in cold water.
    • Cover them with plenty of water. Ensure the water level is about 2-3 inches above the chickpeas as they will expand.
    • Soak for at least 8 hours or overnight
    • For quick method: bring chickpeas and water to a boil for 1-2 minutes. Remove from heat, and let it sit for 1 hour.
  2. Drain:
    • Drain the soaked chickpeas
  3. Cook:
    • Place the chickpeas in a large pot or a pressure cooker.
    • Add water until it’s 2 inches above the level of chickpeas. Also, add 1 teaspoon of salt.
    • Cover the pressure cooker with the lid and pressure regulator.
    • Cook on high until you hear 3 whistling sounds.
    • Turn off the heat and set aside the pressure cooker until all the pressure has dissipated on its own.
    • If using a pot: Once boiling reduce heat to low, cover the pot and let the chickpeas simmer for about 1 hour, or until tender. Check them periodically and add more water if needed to keep the chickpeas submerged.
  4. Check for Doneness:
    • Taste for tenderness. They should be soft but not mushy. IF they are not done, continue simmering for 10-15 minutes.

Tips:

  • Storage:
    • After cooking, chickpeas can be refrigerated for up to 5 days or frozen for up to 3 months.

Ingredients
  

  • 1 cup chickpeas or cooked chickpeas or garbanzo beans
  • 2 tbsp Olive Oil
  • 1 medium onion thinly diced
  • 3 cloves garlic minced
  • 1 tsp garam masala
  • 1 tsp turmeric powder
  • 1 tsp coriander powder
  • 1 tsp chili powder as required
  • 1 tsp vegetable powder optional
  • 100 ml tomato paste or 2 large fresh tomatoes, chopped
  • 2 tbsp lime
  • salt as per taste
  • 150 ml whipping cream / Schlag sahne (as required)
  • 2 tbsp light soya sauce
  • 1 tsp brown sugar /maple syrup
  • Fresh coriander for garnish

Instructions
 

  • Heat the 2 tbsp olive oil in a large pan over medium hear
  • Add the onions and saute until they are golden brown.
  • Add minced garlic and saute for a minute.

Add Spices

  • Add 1 tsp of garam masala, turmeric, coriander, chili powder and vegetable powder (if available) to the pan.
  • Stir well to combine and cook for 1-2 minutes, allowing the spices to release their flavors.

Add Tomato paste

  • Add the tomato paste and 2 tbsp lime juice for a touch of acidity. Stir and mix together.
  • If using fresh tomatoes, add it to the pan and cook for 5 minutes till they break down.
  • Pour in whipping cream and stir well.

Add Chickpeas

  • Add the cooked chickpeas to the pan and stir in to coat with the spice mixture.
  • Pour in soya sauce. Add sugar or maple syrup and salt to taste.
  • Bring the curry to a gentle simmer and let it cook till it comes to a boil. Stir occasionally.
  • Garnish the chickpea curry with fresh coriander.
  • Serve hot with your favorite flatbread, rice or naan.

Fresh Clams in Coconut Milk

Coconut milk gives a rich flavor especially with a combination of seafood and spices. Fresh clams in coconut milk is one of the favorite recipes you will love from the asian cuisine.

After my first attempt of cooking clams I wanted to make curry that would go well with rice. This time we went to the wet market little earlier than usual on saturday morning at about 9 a.m to get fresh clams. I was utterly shocked to see variety of shell fish that were sold in singapore and most of them were sold out. The fish monger who sold only shell fish told me I shoud  have come early to see more of the fresh sea shells. So I was still late to see all the other varieties of shells? WOW! I haven’t seen these shells being sold even in my hometown although having lived all my childhood near the sea I was stunned and excited at the same time.

 

But I was not too late to grab my fresh clams after all. Lucky us! This time I found clams with a size slightly bigger in size than the ones I bought the last time.

 

Preparation time: 5 minutes

Cooking time: 30 minutes

Serves: 3-4

 

Ingredients

Fresh clams – 1 kg, cleaned (*see here)

Olive oil / Butter – 1 tbsp

Shallots – 2, finely chopped

Tomatoes – 2, finely chopped

Fish curry powder / Fish powder – 3 tbsp

Turmeric powder – 1/4 tsp

Coconut milk – 200 ml

Water – 1 to 2 cups, depending on consistency

Salt

Coriander leaves for garnish (finely chopped)

Directions

1. Heat a heavy-bottomed container with oil or butter on medium-high. Fry onion till translucent for a few minutes. Add in chopped garlic and ginger. I used ginger paste as fresh ginger was out of stock.

2. Fry the garlic and ginger for a few seconds then add tomatoes. Cook the tomatoes until slightly mushy or saute for 2-3 minutes. Add the seafood powder or fish powder and mix.

3. Pour the coconut milk, turmeric powder and salt. Add 1 cup water depending on the thickness consistency for the curry.

Simmer for few minutes and check for salt. Add more if necessary.

 

4. Add the clams and cover with a tight-fitting lid. Cook for 5 – 8 minutes covered on medium heat.

Check to see if all the clams have opened. All of the clams will open by this time. Check for salt.

Garnish with chopped coriander and serve hot with rice or bread.

Pork Lettuce Wraps

Pork mince can be used for different types of meals such as preparing meatballs, fillings for wonton soup, patties etc. Hence its versatile.

This recipe of adding greens in your everyday diet is a healthier choice. Pork mince goes very well with lettuce with a juicy intense flavor of sweetness, spiciness and tanginess. I would definitely make my lettuce wraps often as it is less time-consuming and also a great idea to make use of greens.

 

 

Preparation time – 15 minutes

Cooking time – 35 to 40 minutes

Serves: 4+

Ingredients

Pork Mince – 500 g

Lettuce – big bunch

Cumin / jeera seeds – 1 tsp

Onion – 1 large, finely chopped

Garlic cloves – 4 large, finely chopped

Ginger – 1 inc long, finely chopped, same quantity as garlic

Tomatoes – 2 medium, finely chopped 

 

Cumin powder – 1/4 tsp

Coriander powder – 1 tbsp

Garam masala powder – 1 tsp

Pepper powder – 1 tsp

Chilli powder – 1 tbsp

Carrot – 70 g , medium size peeled and grated

Green / Red bell pepper (paprika) – small, finely chopped 

Nandos Peri-Peri chili Sauce (mild) – 3 tbsp, choice of spice level

Tomato ketchup – 1 or 2 tbsp depending on sweetness

1 large Lime for garnish (RECOMMENDED), cut into quarter slices

 

 

 

Directions

Initially prepare the first 6 ingredients and leave the rest for later to save time.

1. Heat a large wide saucepan with olive oil on medium-high heat and toss in the cumin seeds. Fry for a minute then add onion and fry till translucent.

Meanwhile you can start preparing the carrot and peppers while the onions cook.

2. Add chopped garlic and ginger. Fry for a few seconds on medium-high until the raw smell goes away. Add chopped tomatoes and pinch of salt. Stir fry until the tomatoes get cooked and slightly mushy (adding salt makes  the process of cooking tomatoes slightly faster).

3. Add mince pork and all the spices such as cumin, coriander, garam masala, pepper and chilli powder. Mix and stir-fry for 3 – 4 minutes on high heat turning them slightly brown.

4.  Add nandos sauce, Mix. Toss in bell peppers and shredded carrots. Mix and Cook for another few minutes.

Lastly, drizzle some tomato ketchup. Mix well and let it soak in the juices for another 2 minutes. Turn off heat.

5. Clean and wash the lettuce leaves 5 to 7 large leaves or if the leaves are small combine 2 leaves. Dry them with a kitchen towel and spread the pork mince over the leaves.

Drizzle generous amount of lime over the minced pork and enjoy. Garnishing with lime gives it a distinct tangy, spicy and sweet flavor which I really enjoyed.

Quick and Easy Paneer Side Dish Recipe

This is a recipe which I prepare quiet often when I am on the hustle. It is one of the easiest recipes to side with anything. Now, that is one good reason why I couldn’t post this recipe earlier. Still, this time with my husbands help in clicking pictures I post this recipe today.

This is one of the easiest side dishes to prepare. It is also one of the most delicious options when you have ready-made paneer on hand. You can whip up this dish in under 30 minutes. This vegetarian dish is sure to delight your family and friends. You can also check my earlier post on Paneer Butter Masala recipe. It offers a different version with some gravy. Preparation time: 5 minutes

Cooking time: 20 minutes

Serves – 2

Ingredients

Paneer / Indian cottage cheese – 240 g

Garlic cloves – 2, finely chopped

Onion – 1 medium, roughly chopped

Vinegar – 1 tbsp

Tomato ketchup – 2 tbsp

 

Nando’s Peri -Peri sauce (mild) – 3 tbsp, depending on spice level

Oyster sauce – 1 tbsp

Soya sauce – 2 tbsp

Sesame sauce – 2 tsp

Green chilies –  1 small

Bell Peppers / Paprika ( red preferably) – 1, chopped with seeds removed 

Pepper powder – 1/2 tsp

Salt

 

Directions

1. Heat a saucepan with oil on medium-high. Once hot add chopped garlic and fry for a minute until the raw smell goes away. Add chopped onions and fry till they turn translucent.

Add tomato ketchup.

2. Add the sauces of Nando’s peri-peri, oyster sauce, chilli powder, coriander powder and vinegar. Mix and combine well.

3. Add soya sauce, sesame oil and toss in the paneer cubes with salt. Mix to coat it with the mixture. Do not over mix.

Cover and cook for 4 – 6 minutes on medium until paneer is cooked.

4. Lastly, add the green chilies and chopped paprika. I didn’t have the red paprika that day. I usually prefer it for an intense flavor. So, I used the green pepper instead.

Mix and let it cook for another 2 minutes.

 

Serve as sides with bread or rice.

Fish Fillet Recipe

No-bake recipe of dory fish fillet seasoned and coated with egg, flour and breadcrumbs. One can serve these as party snacks with tartar, mayonnaise or mustard dips. For accompaniment as mains serve them with some greens. An even easier and quick way is making a fish fillet sandwich or serving them on a slice of baguette topped with sauce during a weekend get-together party.

Preparation time: 25 minutes

Cooking time: 5 minutes

Serves: 2

Ingredients

Vegetable oil for deep frying

Dory Fillet – 1 large, salted and sliced as shown below

Eggs – 2, lightly whipped and salted

All-purpose flour – 1/2 cup or more as required to coat

Breadcrumbs – 1 cup

 

Directions

1. Sprinkle some salt over the fillets and cut the fish fillet into long diagonal strips of 2 cm / 1.5-inch wide using a long sharp knife.

2. In one shallow bowl whisk 2 eggs with a fork, add 1/4 tsp salt. In a zip-lock bag with flour, season lightly with salt. Place breadcrumbs in another bowl.

3. Dip fish strips into the egg, coat well turning sides. Place few of them in the bag containing flour and shake to coat.

Lastly, coat them with breadcrumbs. Place them on a plate.

 

 

4. Heat 1-inch oil in a deep-bottomed container on medium (induction #6). When its hot enough a small piece of breadcrumb sizzles. Add the fish strips in batches not to overcrowd.

Fry for a minute  and turn side until it turns slightly dark brown. Drain using a slotted spoon on a kitchen paper towel.

 

5. Serve hot with lemon wedges or sauces of choice.

I made this while I was home alone so I got the idea of quickly making a sandwich from these fish fillets. Since I had wholegrain bread stored in my fridge, I just toasted it in the pan lightly for 2 mins each slice and spread it with mustard sauce topped with cherry tomatoes stuffed with fish fillet. This was filling and was quick and easy. You can also add some pickles and veggies to make it a perfect low-cal meal. If your having a party at home serve it in small portions to make an elegant appetizer.

Sweet Chilli Prawns

I know there are many ingredients that include in Sweet Chilli Prawn recipe, but not all are required. You can still prepare this recipe with few sauces like the soya sauce and tomato sauce. They are always in my pantry for delicious stir-fry dishes as these.

This dish is mildly spicy, and in order to find these ingredients, the first place I recommend is your local international food market. The key ingredient for the spice in my recipe is the red-chili paste. It can turn up the heat and can be used for any seafood recipes like fish, prawns, squids etc.

 

 

Preparation time: 15 minutes (excluding cleaning prawns)

Cooking time: 25 minutes

 

Ingredients

Large prawns – 250 g , tips & legs removed

Ginger – 1 inch, finely chopped

Garlic – 2 big. finely chopped

Onions – 1 medium, chopped

Red pepper/Bell pepper – 1, cut into 1 inch

Spring onion (whites & greens) –  1/4 cup, set aside for garnish as well

Pepper powder – 1 tsp

Red chili paste / Red chili powder – 1/2 tsp

Vinegar – 1 tsp

Salt – 1/2 tsp

Tomato sauce – 1 tbsp

Sweet chili sauce – 1 tbsp

Light soya sauce – 2 tbsp

Cornflour mixed in 1/4 cup of water

 

For Marinade:

Ginger-Garlic paste – 1 tsp

Kashmiri red chili powder – 1 tsp

Salt – 1/2 tsp

Egg – 1

Light soya sauce – 1 tbsp

Cornflour – 3 tbsp

 

Directions

1. Season the prawns with the ingredients under marinade: ginger-garlic paste, red chili powder, salt, egg, soya sauce and cornflour. Mix and set aside for 15 – 30 mins.

In the meantime, prepare the rest of the ingredients.

2. Toss the prawns in a heated pan of olive oil. Stir-fry for 4-5 mins on high until they are lightly brown. Remove from and set aside in a plate.

3. In the same pan with 1 tsp of oil. Put ginger and garlic and stir-fry for 1 min on high. Add the onions and fry till it turns translucent. Add red peppers, spring onions, pepper powder. Mix together.

Now, add all the sauces and pastes except for cornflour. Mix together and fry for 2 minutes.

4. Add prawns and cornflour liquid. Reduce heat to medium and stir again gently to coat. Cover and cook for 2-4 minutes keeping an eye.

Vegetable Chili Paste

Vegetable Chili Paste is commonly prepared by my mom at home to give a good flavor and aroma to the dish. Its also known as meet-mirsang masala (chili paste) to us Mangaloreans living in the coastal region.

We grind the ingredients to a fine thick paste and store it in a small bottled container in the fridge. When preparing vegetarian dishes, just add the required amount of the chili paste needed based on your spice level.

Veggies that can be prepared with this chili paste for dry gavy dishes:

  • Yam- Elephant foot / Soorn (konkani)
  • Chickpea (any kind of chickpea) / Bengal gram / Garbanzo : soaked in water overnight before cooking
  • Raw banana plantains

Ingredients

Red dry Kashmiri Chilies – 15 

Coriander Seeds – 1 tbsp

Cumin / Jeera seeds – 1/2 tbsp

Mustard seeds – 1/2 tbsp

Garlic cloves – 4 large

Black Peppercorn seeds – 12

Pinch of turmeric powder

EDIT:

1. Grind all the ingredients with little amount of water into a fine paste using a blender ( smaller container the more finer paste). The paste must be thick and not watery.

Pan-Fried Breadfruit Recipe

 

While Breadfruit is still unknown to many, they are commonly found in tropical areas where good amount of sunlight and rain is required.

We have a tree in our backyard in my hometown and quiet often my family used to prepare this recipe to accompany with anything as a side dish. During my last visit home in March – when it’s the season for breadfruits, the tree stopped fruiting a lot with few breadfruits falling off before even they turn ripe. So, before leaving, I bought a ripe one at the open market and when I got back to Singapore, stored it in the fridge for a few days.

Breadfruit is considered to alleviate hunger and feed the world. It is large, green with a prickly skin when unripe. When buying look for a mature one with a greenish-yellow skin, a smooth surface which is not prickly, a brownish cracking between the surface segments. Avoid buying immature “Green” Breadfruit. In order to delay ripening, store it in the fridge for few days and then freeze it for later use. It tastes more like a roasted potato when ripe. Sweet with an aromatic fragrance.

Pan-Fried Breadfruit Recipe is easy to be made once you learn how to cut it. Do share your views on this recipe. Following are a few names of Breadfruit :

Breadfruit – 500 g

Red chili powder – 1 tbsp

Turmeric powder – 1/4 tsp

Paprika powder – 1 tsp

Vinegar – 1/2 tsp

Salt – 3/4 tsp

1. How to cut breadfruit >>

Cut into halves. Peel it as it were a potato.

Cut them into thin slices of less than 0.5 cm thickness, remove and dispose the core. Season with salt and let it rest for 15 minutes (refer notes for storing extra quantity).

2. Apply some salt and set it aside for 15 mins. After a while you will notice some water settling at the bottom. Discard the water and apply the chili paste (or homemade paste) with your hands.

3. With 2 tbsp of oil, heat a pan. Pan fry each side on medium heat for 4-5 mins or until golden brown.

Mutton Ghee Roast

I have always had sides of mutton recipes in Indian restaurants and it never occurred to me how easy it was to cook at home. Its not so often that I prepare mutton at home because its not available everywhere, especially in supermarkets where pork, chicken or beef is easily available.

Mutton Ghee Roast is another recipe from Mangalore where the spicy freshly ground chili paste is roasted in ghee and then tossed with cooked mutton which imparts a rich delicious flavor of the spices to the meat. You can also prepare this with chicken where I have posted a recipe of Chicken Ghee Roast. This recipe has a mild spice, so do not be afraid to use the chili’s as much as I used.

Before you prepare this, make sure to check the ingredients needed for this recipe. These spices are always available in Indian supermarkets.

Preparation time: 15 minutes

Cooking time: 35 minutes

Required appliance : Pressure cooker / Slow cooker

Blender/Mixer

Ingredients

Mutton with bones – 1 kg, cut into 3-inch chunks

Turmeric powder – 1/2 tsp

Ginger-Garlic paste – 1 tsp

Salt – 1/2 tsp

Ghee – 5 tbsp

 

For the masala paste

Kashmiri dry red chili – 10 (for red color, although it has a bit of heat)

Red chili powder – 2 tsp (depending on the spice level, you can skip this or add later in step-5)

Black peppercons – 1 tsp

Coriander seeds -1 tbsp

Star anise – 1

Cloves – 5

Cinnamon stick – 3 to 4 inch long

Cumin seeds -1 tsp

Fennel seeds – 1 tsp

Cardamom pods – 3

Garlic cloves – 5

Tamarind pulp, half the size of table tennis ball mixed in little water

 

Directions

1.To the cut meat, add turmeric, ginger-garlic paste salt. Mix together to coat the pieces and set aside for 10 -15 minutes.

2. Meantime while the mutton is retained, prepare the masala paste.

Heat a small pan on high heat. Add the spices of dry red chili, peppercorns, coriander seeds, star anise, cloves, cinnamon, cumin,fennel seeds, cardamom (except for garlic & tamarind). Lightly toast them for 2 to 3 minutes.

Then, remove the pan from heat.

 

3. Transfer the toasted spices into a small blender or mixer. Now, add garlic cloves, tamarind water and red chili powder. Grind into a fine paste. If necessary add some water and make a smooth paste.

4. Cooking mutton:

Heat a pressure cooker on high with 2 tbsp of ghee. Add the mutton pieces and fry them for 1-2 minutes.

Add 1/2 cup of water, not too much. Cover with the lid and the whistle. Take 6 whistles and turn off heat. Wait until the pressure is all gone before opening.

Taste the mutton to check for salt to add later.

5. Heat 3 tbsp of ghee in a wok or pan, add the masala paste, salt, and fry on high heat for 30 seconds (if you haven’t added chili powder earlier you can taste the spice level and add now).

Add the mutton pieces (if there is water, you can use it to make soup) without the water or fat content, and stir-fry the mutton to coat the meat pieces. Sprinkle curry leaves and stir-fry for 2-3 minutes until the gravy turns thick and roasted.

The longer you toss, its color changes and becomes more like a dry gravy. Serve piping hot with any rice recipe. It can also be served as a main course with bread.

Chicken Bites

The reason I made Chicken bites with chicken breasts is because it’s bite size, easy and so much better than take-outs. Takes 35 – 40 minutes max. I cannot tell you how much I loved the taste of it after tossing the fried chicken in the sauces. Make sure you do not use salty soya sauce. Chicken bites makes a great side for two. You can double the portion for more servings.

Chicken breast recipes makes delicious sides. My previous post on Chicken Schnitzel is another recipe for easy meals.

 

 

Preparation time: 15 minutes

Cooking time: 20 minutes

Serves: 2

 

Ingredients

Chicken breasts – 300 g , cut into small chunks

Pepper – 1 tsp

Salt -1/3 tsp

Sugar -1 tbsp

Egg – 1

Tapioca starch/flour – for coating

Vegetable oil for deep-frying

 

Butter – 3 tbsp

Red chilies – 1 (spicy or non-spicy), chopped

Curry leaves -1 strip

Oyster sauce – 2 tbsp

Light soya sauce – 5 tbsp

 

Directions

1. In a small bowl with chicken chunks, salt, pepper, sugar, egg. Mix around.

2. In a plate containing tapioca starch. Give attention to each piece and coat chicken with the starch or flour. Place it in a separate plate.

3. In a large skillet or deep-fryer, heat oil ( hot enough that it bubbles as you place chicken). Drop the chicken pieces one at a time, and fry until slightly brown.

Cook meat in batches to maintain oil temperature. Drain briefly on paper towels.

4. Add butter to a large saucepan on medium heat. Add red chili. Toss, then add oyster sauce, soya sauce, curry leaves. Stirring constantly for a few seconds.

5. Add chicken and mix well to coat evenly. Serve hot.
