Compared to chicken breasts, thighs have a richer taste and texture and stay succulent even after cooking. The moisture is retained and Flavorful especially when roasted or baked. Using bone-in thighs adds even more depth to the Flavor.

The Magic of the Marinade

This recipe includes a marinade made with fresh ginger-garlic paste. The paste is homemade and uses a blend of aromatic Indian spices. These spices include turmeric, cumin, coriander, garam masala, and paprika. Each spice plays a role. Turmeric adds warmth and color. Cumin and coriander bring earthiness. Garam masala adds a complex fragrant note. Paprika and red chili powder add just the right amount of heat.

Marinate the chicken for a longer time. This allows the flavors to deeply infuse the meat. It results in a tender and well-seasoned dish. Plus, a splash of lemon juice brightens everything up, balancing the spices with a refreshing tang.

How to Prepare

  1. Marinate: Using your fingers, massage the ginger-garlic paste and spice mixture into the chicken thighs to coat them evenly. This hands-on step ensures every bite is packed with flavor.
  2. Bake: Arrange the marinated thighs on a baking tray and rub them lightly with olive oil. Bake in a preheated oven at 200°C (390°F) for about 30 minutes. Cook until the chicken is golden and cooked in the juices.

Ingredients

Chicken thighs – 2

Ginger-Garlic paste – 1 1/2 tsp

Turmeric powder – 1/8 tsp

Salt – 3/4 tsp

Red chili powder – 1/2 tsp

Cumin powder – 1/2 tsp

Garam masala powder – 1/2 tsp

Paprika powder – 1/2 tsp

Coriander powder – 1 tsp

Pepper powder –  1/4 tsp

Lemon – 2 thin slices ( or add 1 tbsp vinegar to the marinade )

 

Directions

1. Marinate the chicken 2 – 3 hours in advance. Alternatively, store it overnight in the fridge. This allows the chicken to absorb all the spices for enhanced flavor before baking it.

2. Prepare the paste for the marinade in a small bowl. Mix all of the spices with some water as mentioned under ingredients.

* If it is too spicy add some lemon or lime to neutralize it.
