Vegetable Chili Paste

Vegetable Chili Paste is commonly prepared by my mom at home to give a good flavor and aroma to the dish. Its also known as meet-mirsang masala (chili paste) to us Mangaloreans living in the coastal region.

We grind the ingredients to a fine thick paste and store it in a small bottled container in the fridge. When preparing vegetarian dishes, just add the required amount of the chili paste needed based on your spice level.

Veggies that can be prepared with this chili paste for dry gavy dishes:

  • Yam- Elephant foot / Soorn (konkani)
  • Chickpea (any kind of chickpea) / Bengal gram / Garbanzo : soaked in water overnight before cooking
  • Raw banana plantains

Ingredients

Red dry Kashmiri Chilies – 15 

Coriander Seeds – 1 tbsp

Cumin / Jeera seeds – 1/2 tbsp

Mustard seeds – 1/2 tbsp

Garlic cloves – 4 large

Black Peppercorn seeds – 12

Pinch of turmeric powder

1. Grind all the ingredients with little amount of water into a fine paste using a blender ( smaller container the more finer paste). The paste must be thick and not watery.

2. Store in a sealed container in the fridge and use some amount when preparing dry vegetable dishes.

Note:

*Make sure to use the paste withing a few weeks. You can also portion them in small zip-lock bags with name tag and freeze. When you plan on making it thaw or defrost them few hours before preparing the dish.

Banana Cream Shake

It’s been a while since my last post, but now I’m back. Well, I have been learning to bake and the best way I learn – Bake it yourself! Cooking is fun but sometimes it’s like a laboratory measuring, testing etc. That requires a lot of patience!

So, yesterday I thought of making a refreshing drink. The best part is it requires very little effort and time. All it takes is a few ingredients, blend it together and top with a dollop of homemade whipped cream. While the Greek yogurt adds protein, its creamy and tasty. This is my first topping on a drink and it got me instantly excited. It tasted great! Not too sweet which I always enjoy.

Preparation time: 10 minutes

Serves: 2

Appliance needed: Electric Blender, Hand mixer

Ingredients

Banana – 2 medium

Greek yogurt – 3/4 cup, (I used farmers union Greek yogurt)

Cold milk – 1 cup

Vanilla essence – 1/2 tsp

Ice cubes as required

 

 

For the whipped cream

Whipping cream – 1/2 cup (keep this in the fridge until you’re ready to use)

Powder Sugar – 1 tbsp (Icing sugar will do)

Directions

1. In a blender, mix banana, yogurt, milk, vanilla essence, ice. Blend until smooth.

2. Remove the whipping cream from the refrigerator. Using a hand mixer whip the cream in a bowl (you can also use your hand to whip: use very very cold cream with a nice whisk).

3. Begin whipping initially on low speed at 1 and gradually increase to higher speed. In 2 – 3 minutes time it will form soft peaks.

4. Divide the shake between 2 glasses.

Scoop a tablespoon full of the whipped cream and top the banana shake. Top with nutella or any chocolate syrup desired. Enjoy!

Notes

*I prefer less sweet. You can add more sugar if required.

*You can combine ice cream for more creamy flavor and use almond milk instead of plain milk.

Banana Fritters

Have you ever had this feeling when you crave for certain food, you get homesick and just want to grab certain food from your imagination and quell hunger? Well, I got hungry and saw these over-ripe bananas languishing in my fruit box which brought me into making banana fritters for tea.

Fritters are popularly used with a variety of fruits and vegetables which are usually deep fried.

Preparation time:  10 minutes

Cook: 15 minutes

Makes: 25

Ingredients

Vegetable oil for deep-frying

Mashed Ripe Banana – 3 long

All-Purpose Flour –  1 1/2 cup

Grated coconut – 3 tbsp

Salt – 1/2 tsp

Baking powder – 1 tsp

Sugar – 1 1/2 tbsp

Rice Flour – 1/2 cup

Water – 1 cup 

 

Directions

1. Place the coconut, flour, salt, baking powder, sugar, rice flour into a deep container.

2. Pour the mashed banana into the flour mixture. Add water and mix till well combined to make a thick batter.

3. Fill a deep-fry pan with enough vegetable oil for deep frying. Turn it on to medium heat  and leave it to heat (see notes for details).

4. Drop a tablespoon of the banana mix into the oil, and fry up to 5 or 6 at a time on medium heat (make sure not to add too much mixture as it will puff up slightly while it cooks). Keeping an eye on them, turn with a slotted spoon for a few times until they turn golden brown on each side.

Remove and drain on kitchen towels to remove excess oil. Repeat the process until all the mixture is used.

 

5. Serve warm , or let it cool completely.

Storage suggestion

+ Store in airtight container at room temperature and use within a day

 

 

Note

*To check if the oil is hot enough, take a pinch of the mixture and drop it in the oil, it should sizzle with bubbles surrounding it.

Blueberry Smoothie

Here is how you can prepare a healthy blueberry smoothie with bananas.

Serves : 2

Preparation: 5 mins

Ingredients

Blueberry – 1 cup

Banana – 1 large

Milk – 1 cup

Chia Seeds – 1 tsp , soaked in 1/2 cup water at room temperature for 10 mins

Chia seeds

Honey – 1 Tbsp (optional for sweetness)

Ice – as required

Directions

1. Combine all ingredients in a blender, starting with banana and liquids, so the softer one’s are at the bottom- except for ice. Blend it.

2. Now, add ice, blend. Serve and enjoy! 

Note:

*This smoothie needs to be consumed immediately as the longer it is left to stand the more it will thicken with a curdled appearance because of the dairy product such as milk.

If you wish to make the smoothie in advance blend all the fresh fruits without adding dairy product. Store it in covered container in fridge and blend or whisk the milk before serving. As a result, you will get a refreshing drink.
