Let It Snow – Window Clings

It’s December! Yay!! A season to be jolly and be crafty to celebrate Christmas. Making window decals with colorful snowflakes is an exquisite way of decorating your home.

For me a snowy Christmas is such an amazing feeling since most of my life I have lived in a tropical climate and snow during Christmas is SO MAGICAL!! In Singapore I don’t get to experience a snowy winter which makes it incomplete without a few flakes of snow. Custom made snowflakes from glitter glue is indeed fun anytime. It can be made into any shapes and designs you like and let it dry overnight. Get your kids into making these and hang them on windows and they will love it. They can be removed, re-positioned and reused for next year as well. So what are you waiting for?

Resting time : overnight or 24 hours

 

 

 

Supplies

Tulip dimentional fabric paint glitter / Tulip puffy fabric paint – Multicolour

Wax paper /  Storage plastic zip-lock bags

Printed template design of choice or ready made design from any magazine (template for print below):

Directions

1. Place a equal size wax paper over the template design A4 sheet and secure the ends with tiny tapes. You could also use zip-lock storage bags instead of wax paper or clear surfaces that are able to bend to peel them easily later.

2. Give a light shake to get rid of any bubbles in the tube. Squeeze the paint and start tracing the snowflake making sure the lines are thick and touching without any gaps or bubbles.

3. Once all are traced, simply let them sit overnight or for a day until they are completely dry. Drying time depends on the thickness of paint used so the time taken may vary.

If your making ornaments of shapes in round it might get a bit tricky to remove so make sure the paint is traced thick.

4. Carefully peel them away slowly starting from the edges. If the paint is thinner it gets slightly harder to peel tearing apart or might even loose shape.

Secure it with your hands and stick onto windows or flat surfaces. It also clings to flat wooden surfaces.

Potato Cutlets with Egg

Vegetarian food has never appealed to me, until now, that I realized how much important it is to have greens and veggies in a diet. I cannot go without meat and I’m trying to add some vegetarian food from now on. Hopefully!!

Starting from here I wanted to learn some vegetarian recipes so I intended on going with potatoes. Potato cutlets are my first try at home apart from making a non-veg cutlet, this turned out surprisingly delicious.” Yumm!” was what my husband exclaimed as he took a bite of it.

It could also be great to have for breakfast or a quick snack or on the menu of kid’s classics.

 

Preparation time: 10 minutes

Cooking time: 30 – 45 minutes

Makes: 12

Ingredients

Potatoes – 350 g / 4 small size or  boiled & peeled potatoes

Spring onion – 6, finely chopped

Eggs – 2

Garlic cloves – 2, finely chopped

Salt – 1/2 tsp

Vegetable oil / olive oil for shallow frying

 

How to cook potatoes?

+Add potatoes (with skin) into a heavy-bottomed pan of cold, salted water and bring it to a boil. Cover and cook for 15 – 20 minutes until tender. To do this insert a skewer, it must get through easily.

+ If it is still firm, let it simmer for a couple of minutes. Then, leave it to stand in hot water for 10 minutes.

+ Drain them thoroughly. Peel the potato skin.

 

Directions

1. Mash the cooked potatoes with your fingers (or any other way most preferred) until no large lumps of potatoes remain.

2. To the mashed potatoes, add spring onions, garlic, eggs, salt. Using your fingers combine evenly.

3. Heat a non-stick frying pan over medium-high heat. Drizzle oil, tilt to spread the base. Pour a tablespoon spoonful of the mixture in the pan of 5-7 cm (2 – 2.8 inch). Fry for 3-4 minutes on each side.

4.Transfer to a plate. Repeat with the remaining oil and mixture of potato and egg.

Serve with tomato ketchup or as side with pulav.

Jackfruit Fritters (Mangalorean Cuisine)

Jackfruit  is an exotic produce popularly found in South India. If you haven’t heard of this fruit before, you sure must be wondering what in the world is that and how does it look like?  Unfortunately, I do not have a picture of the whole jackfruit to share but will surely post it here when I do. It is extremely delicious, sweet and chewy. I have known of 2 varieties: One variety has a harder flesh with crunchiness. The other variety is very soft, stringy, juicy and slips easily through your fingers as you hold them. One can just swallow without biting.

I grew up in my native with these 2 varieties of Jackfruit trees in my granny’s yard. We rarely ate the softer jackfruits during those days. We used to just sit down for lunch with a big jackfruit and eat it until we became full.  My granny and mom are experts in cutting open a Jackfruit and it is a laborious one as it gets very messy because of its sticky white fluid that oozes from its core. To cut it,  a traditional Mangalorean Implement  called ”Adalo” in Konkani, which is a small stool that is attached to a sickle at one narrow end, is commonly used to cut big fruits or vegetables that would be usually hard to cut with a hand held knife.

I prepared Jackfruit Fritters (also called as Ponsache Gariyo in Konkani) from rice grains, a traditional way my mom used to make during the season of jackfruits. Also, make sure to check out my previous post on Banana fritters in case you haven’t which can be prepared using flour. Jackfruit fritters are brown and crispy on the outside. The inside is yellow and soft, full of fruity sweet flavor. You can double the ingredients for more fritters.

Preparation time: 15 minutes

Cooking time: 20 minutes

Makes: 15 – 20

Ingredients

Raw rice/white small grain + dosa/idli rice or Surai – 1/4 cup (mixed together in equal proportion)

Jackfruit – 280 g / 10 bulbs

Cardamom pod – 1, seeds to be used

Grated Coconut – 2 tbsp

Jaggery cubes – 50g, powdered (for sweetness as required)

Pinch of Salt

Vegetable oil for deep frying

Directions

1. Soak the raw rice and dosa rice mixed together covered in water for 2 hours.

2.Remove the seeds from the jackfruit bulbs.

Place the jaggery cubes in a zip lock bag and pound them to fine powder.

3. Combine the rice, jackfruit, cardamom seeds and puree in a blender until smooth.

4. Transfer the puree to a mixing bowl. Add coconut, jaggery, salt and mix until well combined.

2. Heat oil in wok on medium heat. To test if the oil is hot enough, drop a pinch of batter. If it bubbles around then its hot enough.

Now, drop in a tablespoon of batter. Cook several at a time, but do not overcrowd the wok or the temperature of the oil will be lowered. Flip the them after it turns slightly brown until it turns golden brown let it cook. Lower the heat and drain on kitchen paper.

Serve warm
