Garlic Shrimp fry

Shrimps are one of my favorite. This pan fried shrimp recipe is one of the easy recipes to prepare when your craving to have something fried with spice. Not shelling the shrimp gives it a glorious spice filled flavor of garlic. I used fresh garlic as I was out of stock of garlic paste. If you have garlic paste, using it would allow the shrimps to absorb the juices faster from the marinade paste.

Preparation time: 15 minutes

Cooking time: 15 -20 minutes

Ingredients

Whole shrimps – 250 g, Washed with legs and veins removed

Olive oil / Butter for frying

Garlic clove – 1

 

For the marinade

Fresh Garlic – 1 tbsp, minced

Fresh Ginger – 1/2 tsp, minced

Turmeric powder – 1/4 tsp

Vinegar – 1 tbsp

Light Soya sauce – 1 tsp

Red kashmiri chili powder – 1 1/2 tbsp

Paprika powder – 1 tsp

Salt – 1/2 tsp

 

Directions

1. Marinate the Shrimps with the ingredients mentioned under marinade overnight or for 1 hour.

2. Heat oil in a pan on medium-high heat and drop a piece of garlic. Fry for a couple of seconds and then thrown in the shrimps.

3. Cover and fry for 2 minutes. Flip the sides and cook for another 2 minutes. You will see the water steaming out slowly and shrimps curling. Let the water dry out. Fry for another 2-3 minutes.

4. Repeat the same for the rest of the shrimps.

Crispy Chicken Fry

Crispy Chicken Fry, yes! It’s chicken again, Yoho! But this one adds more crunch. Why? The crunchiness is because I used oats as a coating which is healthy and adds more fiber to your diet.

Preparation time: 15 minutes

Cooking time : 25 minutes

Ingredients

Skinless Chicken with bones – 500 g ,  cut into small pieces

Vegetable oil – as required (see under directions, point 4)

Heavy-bottomed pot or pan 18 cm ( 7 inch ) diameter

Marinade 1: The chicken is marinated overnight. Cover and let it sit in the fridge.

Ginger-garlic paste – 3/4 tbsp

Red Chili powder – 1 tbsp (I used Kashmiri chilli powder)

Vinegar – 1 1/2 tbsp

Salt – 1/8 tbsp

Turmeric powder – 1/4 tsp

Pepper powder – 1/2 tsp

Paprika powder – 1 tsp (optional)

Marinade 2: After overnight marination.

All-purpose Flour – 3/4 cup

Marinade 3: After marinating with all-purpose flour.

Egg White – 2

Oats -80 g

Directions

1. Prepare the chicken and add all the ingredients mentioned under Marinade 1. Mix well, cover and place it in the fridge overnight or 6 hrs in advance.

2. Remove the chicken from the fridge. Prepare a plate with all-purpose flour (Marinade 2). Coat each piece with the flour on both sides. Keep it aside for half an hour.

3. Next, (Marinade 3) take 2  bowls. One bowl containing 2 egg whites (lightly beat with a fork) and the other bowl containing oats.  To the egg white add a pinch of salt.

4. Now, dip the chicken pieces with the egg white and then with the oat mix, coating evenly on both sides.

5. Once you have coated all the chicken pieces , heat a heavy-bottomed pot containing  oil up-to 2 inches.

6. Drop the chicken into the oil one by one in batches. Make sure you do not overcrowd it ( I fried 4 – 5 pieces at a time ). Fry on medium for 5 minutes turning sides in between.

7. Reduce heat and remove the chicken from the oil and place it on kitchen towels.

Fried chicken is ready to serve.

Baked and Spiced Chicken Thighs

This easy recipe of spicy baked chicken thighs could be very satisfying with any food that comes along with it. It is a healthy alternative to deep frying your chicken. My hubby loves this recipe. So, go ahead and satisfy that hungry belly.

Preparation time: 2 minutes

Cook time: 30 minutes

Ingredients

De-skin Chicken thighs – 2

Ginger-Garlic paste – 1 1/2 tsp

Turmeric powder – 1/8 tsp

Salt – 3/4 tsp

Red chili powder – 1/2 tsp

Cumin powder – 1/2 tsp

Garam masala powder – 1/2 tsp

Paprika powder – 1/2 tsp

Coriander powder – 1 tsp

Pepper powder –  1/4 tsp

Lemon – 2 thin slices ( or add 1 tbsp vinegar to the marinade )

 

Directions

Marinating the chicken 2 – 3 hrs in advance or stored overnight in the fridge would let the chicken absorb all the spices for an enhanced flavor before baking it.

1. Make small cuts on the thighs.

2. Prepare the paste for the marinade in a small bowl with all of the spices and some water mentioned under ingredients.

3. Using your fingers, marinate the chicken.

4. Place the thighs in the baking tray and rub some olive oil on the chicken. Bake  at 200 degree Celsius (390 degree F) for half an hour  or until its nicely roasted and cooked.

* If it is too spicy add some lemon or lime to neutralize it.

Paneer Butter Masala

The word “paneer” is of Persian origin. It is a fresh cheese common in South Asia, especially in Indian, Pakistani,  Afghani, and Bangladeshi cuisines.

Requirement: Blender

Preparation time: 20 minutes

Cooking time: 35 minutes

Ingredients

For the paste

Olive Oil – 1 tbsp

Onions – 2 Medium, roughly chopped

Tomatoes – 3, chopped

Salt as required

Garam masala powder – 3/4 tsp

Coriander powder – 3/4 tsp

Cashews – 10 to 12, cut half through it’s center-line

Red chili powder – 3/4 tsp

Sugar – 1/2 tsp or as required

Post Blending

 Panner cubes / Cottage cheese (frozen pack) – 250 g 

Butter – 1 1/2 tbsp

Cardamom – 3

Cinnamon stick – 2 inch

Cloves – 3

Ginger paste – 3/4 tsp (or ginger-garlic 1 1/2 tsp )

Chili powder – 1/2  tsp

Water – 1/2 cup or as required for consistency

Dried fenugreek leaves / kasoori Methi – 1/2 tsp

Coriander leaves – 2 tbsp (for garnish)

Cream – 3 tbsp

Whipping cream for Paneer Butter Masala

Directions

1. Heat a large pan with olive oil, fry onions until they turn translucent.

2. Add tomatoes along with salt , cover & cook until they turn mushy for 2-3 minutes on medium.

3. Now, add red chili powder, garam masala, coriander powder, cashews & sugar. Mix well, fry until you see that it doesn’t stick to the sides of the pan. Turn off the heat and let it cool down almost completely before you put it in a blender.

4. Once the above mixture is cooled, pour it into blender with 1 cup of water (add less water initially)and blend till it turns smooth and creamy.

5. After blending, in a deep wok or pan heat butter. To the melted butter add cardamom. cinnamon sticks, cloves  & fry for 2 minutes. Add ginger paste, stir again for 15 seconds.

6. Pour the mixture of blended paste puree with red chili powder and water and adjust the consistency of thickness. Cook for nearly 5 minutes on medium. Check for salt, add if necessary.

7. Add paneer, fenugreek leaves. Stir and cook for 3 minutes. Pour in cream, stir for a minute. Remove from  heat. Add in  coriander leaves or more cream if desired when serving.
