Potato Bhaji / Aloo Bhaji – Vegetarian

Potato Bhaji or Aloo bhaji is a South-Indian dish served hot along with a round deep-fried bread called puri or poori also named as poori bhaji as a whole. It’s typically prepared spicy so you can add green chilies if you like it hot.

 

Preparation time: 10 minutes

Cooking time: 35 to 40 minutes

Serves: 3-4

Ingredients

Potatoes – 3 large / 500 g

Olive oil – 2 tbsp

Mustard seeds – 1/4 tsp

Curry leaves – 2 small stems, lightly rinsed and tapped dry

Ginger – 1 inch, mashed

Garlic cloves – 5 small, mashed

Asafoetida – 1/4 tsp

Onions – 1 medium, chopped thinly

Turmeric powder – 1/4 tsp

Green chili – 1 (optional for spice)

Salt – 1 tsp

Water – 3/4 cup

Directions

1. Prick the potatoes with the fork all over. In a large pot of  lightly salted boiling water cook the potatoes for 25 minutes on medium-high heat.

Drain them well and peel the skin. Mash them using a fork. Reserve for later.

2. Heat deep bottom container with olive oil on medium heat. When the oil is hot add mustard seeds, as they sputter add curry leaves, ginger and garlic.

Stir for a minute, then, add asafoetida powder, chopped onions, turmeric. Mix together and fry for 2 minutes for the onions to remain crisp.

3. Add the mashed potatoes along with 3/4 cup water. Combine together, cover and cook for 5 more minutes.

Keep an eye to see that it doesn’t get burnt at the bottom of the container by stirring occasionally.

I served it with hot crispy pooris (Indian deep-fried bread). A lovely combination and a great recipe for a vegetarian dish.

I couldn’t manage to take detail pictures while preparing the pooris, so I haven’t posted the recipe of poori yet. But, if I prepare it anytime soon, I will make sure to share pictures and publish the recipe.

Oven-Roasted Spiced Chicken Thighs

Chicken thighs marinated with few blended spices makes it a fantastic easy recipe for an incredible flavor of thirty-minute meals. Roasting in the oven makes it effortless to spend less time in the kitchen during busy hours.

 

Preparation time: 5 minutes (excluding marination)

Cooking time: 30 minutes

Ingredients

Olive oil 

Skinless chicken thighs – 3

Coriander leaves – 2 stems

Red dry chili – 1

Coriander seeds – 1/2 tsp

Cumin seeds – 1/2 tsp

Ginger-Garlic paste – 1 tsp

Salt – 1/2 tbsp

Dry Oregano – 1/2 tsp

Yogurt – 2 tbsp

Carrot – 1 large, cut diagonally into 2-inch chunks

 

Directions

1. Into a blender add the coriander leaves, red dry chili, coriander seeds, cumin with some water and make a paste. You can also use a pestle and mortar and pound to a paste.

Add the paste to chicken pieces.

2. Additionally, add ginger-garlic paste, oregano, salt and yogurt. Coat the mixture.

Cover loosely and leave in the refrigerator to marinate for 3 – 4 hours or overnight.

3. In a roasting dish sprinkle some olive oil. Place the carrots. Remove the chicken and arrange them over the carrots. Pour the rest of the marination sauce over the pieces of chicken.

Cover with an Al- foil.

4. Bake in a preheated oven for 25 – 30 minutes at 200 degrees.

Prawn with Coconut Milk

I’m so glad to be posting again. My first post of the year with fresh white prawns, all time favorite!

I prepare prawns with coconut milk quiet often, so I don’t have to spend a lot of time in the kitchen. It’s goes well with rice , bread or rice pancakes which I have posted earlier. If you can find fresh prawns at your local stores it’s a must try recipe with coconut milk. From my previous experience frozen prawns do not give a flavored taste as much as the fresh prawns do. I made use of a spice powder called Chicken sukka powder, believe me, this recipe tastes delicious with this ingredient. Even if you don’t have it you can substitute it with fish curry powder or any prawn spice powder. It’s available at the Asian stores if you have trouble finding.

Makes: 6 servings

Ingredients

Ghee or vegetable oil – 2 tbsp

White fresh prawns – 325 g, deshell  deveined

Onions – 1 medium, chopped

Ginger-Garlic paste – 1 tsp

Potatoes – 4 small/2 medium, peeled & chopped

Green chili – 1

Tomatoes – 1 large, chopped

Chicken Sukka powder – 1 1/2 tbsp (trust me!)

Fish curry powder – 1 tsp

Coconut powder / Milk – 50 g powder or 3/4  cup milk (powder mixed in 1 cup water until dissolved)

Coriander powder – 3/4 tsp

Cumin powder – 1/4 tsp

Turmeric powder – 1/4 tsp

Salt

Coriander leaves for garnish

 

Directions

1. To the deshelled prawns sprinkle salt and set aside.

2. Heat a large deep container with ghee or oil on medium heat. Add onions. Fry until translucent or lightly brown. Add ginger-garlic paste. Stir fry for a couple of seconds.

3. Add green chili and potatoes. Stir fry for a minute. Add tomatoes, 1/4 tsp salt, mix and cover. Let the tomatoes get mushy, stir frequently so it doesn’t get burnt.

4.  Next, add chicken powder, fish powder. Mix well and stir fry for a minute.

5. Pour coconut milk, 2 cups of water and salt. Mix. Add coriander, cumin and turmeric powder.

6. Cover and cook till it boils. Check if potatoes are cooked by piercing a fork. Check salt. If necessary add more salt.

7. Add prawns. Mix and cook until it boils. Switch off the heat. Garnish with chopped  coriander leaves.

Prawn Fried Rice Recipe

A quick and easy one pot rice recipe is the Fried Rice. I picked up this recipe from my sis-in-law back then when I used to visit them in a countryside. This is almost exactly her recipe.

It is a great way to use left over rice or prepare it quickly for many servings.

Preparation time: 15 minutes

Cooking time: 20 minutes (plus cooking rice 20 mins)

Ingredients

Oil – Vegetable/Olive

Vegetables:

Green bell pepper – 1

Red bell pepper – 1

Green beans – 1/2 cup

Carrots – 1/2 cup

 

For the rice:

Cooked rice – 1 cup, (I used freshly cooked rice, you can also use left-over rice)

Ground black pepper – 1 tsp

Sweet chili sauce – 2 tbsp

Chicken stock – 1 cube, mixed in warm water

Spring onion – 1/2 cup, chopped

Prawns – 1 cup, whole or halved (I cut them into halves)

Red chili powder – pinch (for prawn)

Egg – 2, lightly beaten with addition of a pinch of salt

Salt

 

 

 

Directions

1. Cut the ingredients into uniform size for an easy stir-fry. Set them aside.

2. Heat a wok or deep pan with 1 tsp of oil.Swirl the pan to coat the pan evenly. To determine the wok is hot enough flick droplets of water, they will evaporate in a matter of seconds (make sure not to overheat). Now, its ready to stir-fry the ingredients.

 

3. Stir Fry:

Add the beaten eggs, stir-fry and scramble using a wooden spatula for 1- 2 minutes. Transfer it on a large plate.

Then add the carrots and green beans. Fry till tender crisp, for couple of minutes (I fried this separately as it takes longer time to be crispy-tender). Transfer into the same plate containing eggs.

Then, stir-fry peppers until tender crisp. Transfer to the plate.

Do the same for prawns, add 1/4 tsp salt, pepper powder, red chili powder, stir-fry on high till it turns slightly brown. Set it aside in the plate.

4. Heat the wok with 1 tbsp oil, set it on low heat. Add a little portion of the above stir-fry mixture and a slight portion of  cooked rice,  1 tbsp sweet chili sauce,  add half of  the stock . Mix lightly.

Then with rest of stir-fried mixture, rest of the rice add remaining stock . Mix to combine everything.

5. Serve hot. Can be served with sweet chili sauce.

Note:

*For left over cold rice, add 1 tbsp oil, stir through to split the rice grains for a couple of minutes until heated. Add the stir-fried mixture and follow the steps as mentioned ion step 4.

*If you do not have let over rice. Prepare an hour in advance and spread it over a pan or refrigerate to cool faster.
