Pork Recipe- Mangalorean Pork Bafat

I’m not sure why I have been hesitant on posting pork bafat recipe. Mostly because its commonly prepared by Mangaloreans, and I believe most people would know how to prepare it as it is a favorite among all Mangaloreans. However, some have their own special recipe so I thought of sharing this recipe my mom’s way and it’s always a great start to a new dish.

This recipe has been passed down for generations. Some call it pork bafat others Pork curry, and we at home call it “DUKRA MAAS” in konkani (Dukor – Pig  and Mass – Meat). You must have noticed while browsing through my posts some recipes call for Bafat powder. It is a ready-made powder which I got along with me to Singapore. Being brought up in Mangalore its a traditional Sunday ritual prepared by Catholics with its main features being the combination of vinegar and pork often served with a ‘pao’ (Idli / Dosa / Sanna) that is made from fermented rice of Konkani cuisine.

We get different types of pork meat in Singapore which is less fatty compared to the Mangalorean pork meat (best!). Hence, this pork recipe is more of a gravy than a curry. The fat imparts a great flavor to the dish which is why it must have some fat content. At home we sometimes prepare this in a claypot. As you follow through one of my posts on Claypot recipe cooking pork for longer gives it a unique taste. It gets more flavor the following day. So make sure you spare some for the next day.

Preparation time: 10 -15 minutes

Cooking time : 45 minutes

Serves: 4

Ingredients

Cubed Pork belly and lean meat – 1 kg (500 g each), I prefer less fat. Can also include bones

Onions – 3 large, chopped into 1/2 inch size

Garlic – 1/2 pod/bulb, sliced lengthwise

Ginger –  1 inch, finely chopped

Bafat  powder – 2 tbsp

Turmeric powder – 1/2 tsp

Vinegar – 2 tbsp

Salt – 1/2 tbsp

Cloves – 6 

Bay leaf  – 7 (optional), fresh if available, washed  and cut into halves

Directions

1. Cut the pork into cubes. Wash once and add it into medium deep-bottomed container. Prepare the onions, garlic and ginger.

2. To the washed meat, add the rest of the ingredients such as: bafat powder, turmeric, vinegar, salt and cloves along with chopped onions, ginger and sliced garlic. Mix and combine together with your hands to coat spices to the meat.

If you have bay leaf you can add now. We usually have fresh ones at home in our backyard but I haven’t used it here.

3. On medium heat let the meat cook for 40 – 45 minutes covered. Check in between 2 or 3 times and mix. Water oozes out from the onions so there would be no need to add any water.

After 30 minutes, check for salt. Add if required.

4. Turn off heat when the pork has cooked. Serve with rice or bread. You can even have it as a side with beer.

Cook’s tip:

*Do not add any water to this recipe. The onions release water as it simmers.

*If it gets too spicy add vinegar. The more the fat the more bafat powder you will need for spicing up the dish. The more leaner the meat less bafat powder is required depending on personal spice and same goes for black pepper pork.

Mutton Ghee Roast

I have always had sides of mutton recipes in Indian restaurants and it never occurred to me how easy it was to cook at home. Its not so often that I prepare mutton at home because its not available everywhere, especially in supermarkets where pork, chicken or beef is easily available.

Mutton Ghee Roast is another recipe from Mangalore where the spicy freshly ground chili paste is roasted in ghee and then tossed with cooked mutton which imparts a rich delicious flavor of the spices to the meat. You can also prepare this with chicken where I have posted a recipe of Chicken Ghee Roast. This recipe has a mild spice, so do not be afraid to use the chili’s as much as I used.

Before you prepare this, make sure to check the ingredients needed for this recipe. These spices are always available in Indian supermarkets.

Preparation time: 15 minutes

Cooking time: 35 minutes

Required appliance : Pressure cooker / Slow cooker

Blender/Mixer

Ingredients

Mutton with bones – 1 kg, cut into 3-inch chunks

Turmeric powder – 1/2 tsp

Ginger-Garlic paste – 1 tsp

Salt – 1/2 tsp

Ghee – 5 tbsp

 

For the masala paste

Kashmiri dry red chili – 10 (for red color, although it has a bit of heat)

Red chili powder – 2 tsp (depending on the spice level, you can skip this or add later in step-5)

Black peppercons – 1 tsp

Coriander seeds -1 tbsp

Star anise – 1

Cloves – 5

Cinnamon stick – 3 to 4 inch long

Cumin seeds -1 tsp

Fennel seeds – 1 tsp

Cardamom pods – 3

Garlic cloves – 5

Tamarind pulp, half the size of table tennis ball mixed in little water

 

Directions

1.To the cut meat, add turmeric, ginger-garlic paste salt. Mix together to coat the pieces and set aside for 10 -15 minutes.

2. Meantime while the mutton is retained, prepare the masala paste.

Heat a small pan on high heat. Add the spices of dry red chili, peppercorns, coriander seeds, star anise, cloves, cinnamon, cumin,fennel seeds, cardamom (except for garlic & tamarind). Lightly toast them for 2 to 3 minutes.

Then, remove the pan from heat.

 

3. Transfer the toasted spices into a small blender or mixer. Now, add garlic cloves, tamarind water and red chili powder. Grind into a fine paste. If necessary add some water and make a smooth paste.

4. Cooking mutton:

Heat a pressure cooker on high with 2 tbsp of ghee. Add the mutton pieces and fry them for 1-2 minutes.

Add 1/2 cup of water, not too much. Cover with the lid and the whistle. Take 6 whistles and turn off heat. Wait until the pressure is all gone before opening.

Taste the mutton to check for salt to add later.

5. Heat 3 tbsp of ghee in a wok or pan, add the masala paste, salt, and fry on high heat for 30 seconds (if you haven’t added chili powder earlier you can taste the spice level and add now).

Add the mutton pieces (if there is water, you can use it to make soup) without the water or fat content, and stir-fry the mutton to coat the meat pieces. Sprinkle curry leaves and stir-fry for 2-3 minutes until the gravy turns thick and roasted.

The longer you toss, its color changes and becomes more like a dry gravy. Serve piping hot with any rice recipe. It can also be served as a main course with bread.

Pork Ribs Recipe

It is my first preparation of a marinade for pork ribs which turned out as good as I expected. Previously, I had prepared pork ribs but it lacked some ingredient and marination time was less which is why I was reluctant to post it until now. I realized that this recipe turned out just the way I wanted. The excess marination gives it a nice roasted flavor with delicious, sweet and aromatic spice blend.

When marinating I initially thought the tomato ketchup would make it too sweet but it actually wasn’t sweet as it had a combination of other flavors. I really wouldn’t need to buy ready-made marinated pork ribs from the supermarket anymore, which I used to before, and they turned out too salty for me. This recipe just requires a few spices and its ready for the following day. It’s a perfect recipe even for a barbecue party and all you have to do is marinate the pork ribs few hours in advance.

 

Preparation time: 5 minutes (excludes marination)

Cooking time: 25 minutes

Ingredients

Pork ribs – 1 kg (1 lb 4 oz)

Vegetable oil / Olive oil – 1 tbsp

Garlic clove – 1 big, cut into half (or you can also add 1/2 tsp paste to the marinade & skip adding garlic clove when frying)

 

For marinade

Tomato ketchup – 2 tbsp or more if required depending on sweetness

Light soya sauce -2 tbsp

Chili powder – 1 tsp

Turmeric powder – 1/4 tsp

Pepper powder – 1/2 tsp

Paprika powder – 1 tsp

Nandos peri-peri garlic sauce / sweet chili sauce – 1 tbsp

Salt -1/4 tsp

 

Directions

1. Wash the pork ribs and cut them into individual ribs.

2. Combine all the ingredients under marinade in a large non-metallic bowl.

3. Place them in a sealed zip-lock bag overnight or for 24 hours. Make sure you use all the excess marinade when placing them in zip-lock bags.

4. Heat a pan with 1 tbsp of oil, add garlic clove and fry it in the oil for 1 minute. Toss in the ribs along with the marination. Fry each side tossing and turning every 1 minute. Fry for 5-7 mins.

5. In an oven set at 200 degrees Celsius (395 degree Fahrenheit). Put the ribs at the center on the oven rack. Set on Grill mode if you using an electric oven. Cook for 15 – 20 minutes turning the side once after 12 minutes.

6. Once its nicely roasted or browned, remove them from the oven and serve.

Easy Cheese Pasta with Chicken Ghee Roast

Sometimes you get lazy and want to just relax. Times when you want to minimize kitchen time but still have a delicious dinner.

I loved this easy recipe of melted cheese mixed with pasta served with chicken ghee roast. Chicken Ghee Roast is a mouthwatering, spicy and highly aromatic recipe famous in South-Indian cuisine. I got a pack of chicken ghee roast powder when I visited India and it comes in handy when my taste buds feel the desperation of eating something fried.

It is a delicious dinner for two. A quick, easy recipe when you want something spicy to go with pasta. It’s a huge hit with my husband especially for a first try, win-win!

Preparation time: 5 minutes

Cooking time: 25 minutes

Ingredients

Spiral pasta – 1 cup (180 g), can use other variety of pasta

Butter – 3 tbsp

Cheddar cheese slices – 3 or more depending on the how cheesy you want

Mustard Sauce – 1 tsp

Dried herbs – 1 tsp

Tomato ketchup as required for pasta (optional based on taste)

Chicken Thighs – 2 large, cut into small pieces

Ghee – 3 tbsp

For Chicken Marinade:

+ Combine the following:

Yogurt – 2 tbsp

Salt – 1 tsp

Turmeric – 1/2 tsp

Ginger-Garlic paste – 2 tsp

 

+ Marinate the chicken pieces with the marinade. Place it in a zip-lock plastic bag for 4 hours or overnight.

For the Chicken Ghee roast paste (skip this step if you have a Ghee roast powder and follow the instructions on the pack)

+ Combine the following:

Chili powder/red chili paste – 2 tbsp (based on the spice level)

Cumin powder/jeera – 1 tsp

Garlic powder/paste – 1 tbsp

Natural spices / Mixed spices – 1 tsp

Salt -1/2 tsp

Directions

Pasta

1. Fill a container with 3 cups of water, 1 tsp salt and 1 tbsp olive oil, get water to boil. Add pasta (In the meantime prepare for Ghee roast). Cook [pasta until done. Using a strainer, drain the pasta. Set it aside in a plate.

To check if it is done, taste and see for non-sticky soft texture.

2. Heat 3 tbsp butter in the same container on low heat. Add the pieces of cheese, mustard sauce and herbs. Mix until the cheese melts.

3. Toss in the pasta and mix well (prepare this one low heat without burning).

 

Chicken Ghee Roast

 

1. Heat a frying pan with 2 tbsp of ghee. Add the paste of ghee roast. Fry for a 2-3 minutes until the spices blend well.

2. Add chicken pieces. Fry one one side for a minute or two. Flip the side and coat the other sides with the spices.

3. Cover and cook on medium heat for 10 minutes.

Remove the lid and flip the sides every few minutes without the lid until the sides are nicely coated with the spices for 5-7 more minutes.

Cheese pasta with fiery chicken ghee roast is  ready. If you want your pasta fiery hot mix the ghee roast spice paste.

Spicy Chicken Recipe

This Spicy Chicken recipe uses a hot chili pepper called “chili padi” (bird’s eye chili) commonly used in the Malaysian Cuisine. It is also called as Kung Pao Chicken, a spicy stir-fry dish made with chicken, peanuts,vegetables and chili peppers.

Preparation: 10 minutes

Cooking time: 15 – 20 minutes

Ingredients

Chicken – 250 g, cut into 1 inch cubes or smaller

Egg white – 1

Ginger-Garlic paste – 1/2 tsp

Peanuts – 20 g

Garlic – 2 cloves, minced

Red chili padi- 2, chopped

Cucumber – 1, chopped into 1 inch size

Chili powder – 1 tsp

Sesame Oil – 1 tbsp (optional)

 

For the sauce

Chicken stock – 1/2 inch cube

Soya sauce – 3 tbsp

Sugar – 1/2 tbsp

Corn-starch powder – 1 tbsp

Water – 1/2 cup

 

Directions

1. Prepare the ingredients and the sauce. Marinate the chicken with egg white, ginger-garlic paste, mix and set side for 15-20 minutes.

Heat the wok with 1 tbsp oil and fry the peanuts for 2-3 minutes. Set it aside on a plate.

2. Using the same wok with oil. Add garlic and red chili. Fry for half a minute until you get the fragrant smell of garlic.

3. Add the chicken cubes, stir, then add the sauce. Stir fry until cooked.

4. Add the cucumber, 1 tsp chili powder, sesame oil and peanuts. Mix and cook for 1 minute.

Can be served as a side.

Note:

*The smaller the pieces of chicken the better.

*Step 4: I cooked the chicken for 15 minutes as I used a stainless steel wok. If you’re using a non-stick stir-fry pan, you just need to stir-fry until cooked.

*Red chili padi is very hot. If you want it mild hot or less, remove the seeds before frying.

Beef Meatball Curry

This is my second best dish of beef mince I am posting here today. Beef meatball curry recipe has a delicious creamy texture with a sweet taste. Since I used thick sour yogurt it was slightly sour which enhanced the flavor with other combination of spices. Adding yogurt can also reduce the heat of the dish, hence you can adjust the addition of yogurt. It can be served with rice, used as a dip with bread or as a side dish.

 

Preparation time: 25 minutes

Cooking time: 35 minutes

Ingredients

Minced Beef – 250 g

Cumin seeds – 1 tsp

Stew powder – 2 tbsp

Coriander powder – 2 tbsp

Ginger-Garlic paste – 1/2 tbsp

Red chili powder – 1 tbsp

Thick Yogurt – 5 tbsp, lightly whisk using a spoon before adding 

Coriander leaves for garnish 

For paste:

Fenugreek seeds – 1/4 tsp

Onions – 1 medium, roughly chopped

Green chilies – 1

Coriander seeds – 1 tbsp (optional if your adding later as a powder)

Red dried chilies – 2

Turmeric powder – 1/4 tsp

Thick Yogurt – 1 tbsp

Water – 1 cup

For the meat balls:

Onions – 1 small, chopped finely

Ginger-Garlic paste – 1 tbsp

Coriander leaves – 1 tbsp

Red chili powder – 1 tbsp

Stew powder – 1 tsp

Eggs – 1 

Thick Yogurt – 1 tbsp

Gram flour – 1 tbsp

Salt – 1/2 tsp

 

Directions

1. To the mince meat, add the ingredients mentioned under meat balls. Mix well with a spoon and set aside for 20 – 30 minutes. Make round balls of 4-5 cm diameter. Reserve for later.

2. Heat 1 tbsp ghee on medium. Add the fenugreek seeds and onions (mentioned under paste). Fry for 3-4 minutes or until the onions are slightly brown. Let it cool.

3. In a blender add little water, the fried mixture, red chili, green chili, yogurt, turmeric powder.

4. Using a deep sauce pan heat 2 tbsp ghee. Add the paste from the blender and fry for 1 minute. Add the reserved paste along with the water. 

 

5. Add cumin seeds, stew powder, ginger-garlic, red chili powder, 1/2 tsp salt, coriander powder, whisked yogurt. Add more water if necessary (curry must be thick). Mix well. Leave it on medium heat to boil.

6. Add the meat balls one by one. Cover and cook to boil. Keep it on low to cook for another 5 minutes.

Pork stir fry

I’ve always wanted to prepare something easy as a side dish just like the restaurants and this homemade stir fry recipe will knock your socks off!

Preparation time: 5 minutes

Cooking time: 30 minutes

 

Ingredients

Olive oil for frying

Red bell pepper – 1 big, cut into medium small (optional)

Green bell pepper – 1 big, cut into medium small 

Onion – 1 Medium, chopped

Sesame oil – 2 tbsp

Light Soya sauce – 1 tbsp

Ginger-Garlic paste – 1 tsp

Red chili powder – 1 tsp

Nando’s Peri-Peri Sauce (Mild) – 3 tbsp

 

For the marinade (Can fry instantly or can store it in the fridge for half an hour before frying)

Pork Shoulder meat – 300g, sliced as thinly as possible to make 3/4 inch wide of 1 1/2 ich long.

Light Soya sauce – 2 tbsp

Directions

1. Mix the Marinated pork. In a heated wok/skillet with 1 tbsp of olive oil fry the marinated pork with its soya sauce in batches on high heat. Keep stirring well for approximate 10 minutes or until you see it turning brown (*see notes). Strain the fat and transfer pork into a container and keep aside.

2. Using the same wok with the leftover fat, add sesame oil, onions, Green bell peppers, ginger-garlic paste. Stir together for 2 minutes. Add soya sauce. Mix well for less than 1 minute, then add the fried pork, chili powder. Toss and fry for another 1-2 minutes and not longer to retain the crispness of the vegetables.

3. Pour the Nando’s sauce. Stir for 1-2 minutes.

Remove from heat and serve hot as a side.

Notes

*Initially when frying pork, water oozes out and in a couple of minutes it starts drying out. Keep tossing the pork at this point and reduce heat if necessary. Stir every half a minute until you see the fat being released out by itself.

*If necessary add salt, but I haven’t added any salt as soya sauce has some salt content.

*To serve it crisp for later use, make sure the wok lid is not fully covered and let the steam away by keeping the lid slightly open.

Chicken Schnitzel

When I think of Schnitzel, it takes me back to the day when a friend of mine had invited me over for Christmas and we had prepared Schnitzel for dinner along with the other friends.

Schnitzel meaning meat in a crust, is a German word and a very popular dish originating in Austria. In the Viennese cuisine, Vienna or Wien, the dish called “Wiener Schnitzel” is traditionally made from veal served with potato salad (Kartoffelsalat). So, if you visit Austria and the most beautiful city Vienna do not miss it.

Schnitzel can be made by using variety of meat and Chicken Schnitzel is one of them. Adding butter when frying gives the buttery rich nutty flavor.

Preparation time: 15 minutes

Cook: 15 Minutes

Serves: 2

 

Ingredients

Unsalted butter – 4 tbsp

Vegetable Oil for frying – 1 1/2 cup

Boneless chicken breasts or fillet – 2 pieces

All-purpose Flour – 1 cup

Egg – 1 whole

Bread crumbs (Semmelbrösel) – 2 cups

Salt

 

 

Directions

1. When you have the chicken cut into manageable thickness, it can then be tenderized to desired thickness by a mallet or a hammer. To do this, place the meat on a cutting board or an aluminum foil. Place the plastic wrap over the chicken and pound down to even thickness (gently pound them). Add salt on both sides.

2. Place the eggs on a plate and stir lightly with a fork, add a pinch of salt. Prepare two more plates, one with flour and the other with bread crumbs.

3. Lightly coat the chicken with the flour, then dip it into the egg, and then finally coat it with bread crumbs. Place it in a separate plate.

4. Heat oil and butter in a large pan, let the oil heat until bubbly on medium. Fry the schnitzel on one side for a minute and turn side. Keep tossing the chicken for 6 – 7 minutes until golden brown.

5. Place them on paper towels to drain excess oil. Serve hot with lime and potato salad.

Note

* Frying with the addition of oil than just plain butter will not burn very quickly.

* For this recipe one would need fine bread crumbs. If you can find Semmelbrösel bread crumbs at your local store, it would be the best to use.

Pork Vindaloo

“Vindaloo” is traditionally popular in the Goan cuisine in India and often considered as a fiery spicy dish made with pork.

This recipe is more of a flavored sauce with its sweet, tangy taste. Pork Vindaloo limits the use of more chilies in order to tone down the heat of a spicy-hot dish.

Requirement: Blender

Preparation time: 20 minutes

Cook time:  30 minutes to 45 minutes

Ingredients

Vegetable oil/ Ghee – 2 tbsp

Pork Shoulder/Collar – 500 g, cut into chunks of 1 inch

 

For the paste (Masala)

Dried red chilies – 2, soaked in water for 1 hour (see notes)

Onion – 1 Medium, Chopped

Cinnamon stick – 1

Cloves – 5

Star anise – 1

White vinegar – 2 tbsp

Garlic cloves – 3 whole, peeled

Ginger – 1 tsp

Pepper – 1 tsp (or 4 seeds)

Cumin Seeds – 1 tsp

Tamarind paste/pulp – 1 tsp (seeds and fibers removed, see notes)

Sugar – 1 tbsp

 

Post blending

Tomatoes – 2 medium, chopped

Salt – 3/4 tbsp

Paprika powder – 1 tsp

Red chili powder – 1 tbsp

 

Directions

1. While preparing the Pork and the rest of the ingredients, Cook onions with 1 cup water for 15 minutes making sure to keep an eye so that the onions don’t brown or burn.

2. Strain the onions and run the onions under cold water to cool it down. Add the onions, chili, cinnamon,cloves, star anise, vinegar, garlic, ginger, pepper, cumin, tamarind water, sugar. Add 1/4 cup water. Make a paste. Set aside.

3. Heat oil or ghee in a pot on high heat. Add pork (I prepared in batches of 2). Fry for 7 minutes or until it turns slightly brown.

4. After the pork has fried, add the thick masala paste, salt (reserve the water added to the remaining paste). Mix well. Fry for 2 minutes.

5. Combine tomatoes and the remaining water from the reserved paste. Add paprika,chili powder and bring to boil.

6. Reduce heat and cook for 30 minutes by stirring occasionally every 3-4 minutes or until the pork is very tender.

Serve with cooked rice.

Note

*I used tamarind pulp (2 seeds) soaked in water for 10 minutes. Sieved to remove the stringy bits and seeds.

*As this recipe is not spicy, increase the number of chilies for more heat.

*It sauce tastes better the longer you cook.

Crispy Chicken Fry

Crispy Chicken Fry, yes! It’s chicken again, Yoho! But this one adds more crunch. Why? The crunchiness is because I used oats as a coating which is healthy and adds more fiber to your diet.

Preparation time: 15 minutes

Cooking time : 25 minutes

Ingredients

Skinless Chicken with bones – 500 g ,  cut into small pieces

Vegetable oil – as required (see under directions, point 4)

Heavy-bottomed pot or pan 18 cm ( 7 inch ) diameter

Marinade 1: The chicken is marinated overnight. Cover and let it sit in the fridge.

Ginger-garlic paste – 3/4 tbsp

Red Chili powder – 1 tbsp (I used Kashmiri chilli powder)

Vinegar – 1 1/2 tbsp

Salt – 1/8 tbsp

Turmeric powder – 1/4 tsp

Pepper powder – 1/2 tsp

Paprika powder – 1 tsp (optional)

Marinade 2: After overnight marination.

All-purpose Flour – 3/4 cup

Marinade 3: After marinating with all-purpose flour.

Egg White – 2

Oats -80 g

Directions

1. Prepare the chicken and add all the ingredients mentioned under Marinade 1. Mix well, cover and place it in the fridge overnight or 6 hrs in advance.

2. Remove the chicken from the fridge. Prepare a plate with all-purpose flour (Marinade 2). Coat each piece with the flour on both sides. Keep it aside for half an hour.

3. Next, (Marinade 3) take 2  bowls. One bowl containing 2 egg whites (lightly beat with a fork) and the other bowl containing oats.  To the egg white add a pinch of salt.

4. Now, dip the chicken pieces with the egg white and then with the oat mix, coating evenly on both sides.

5. Once you have coated all the chicken pieces , heat a heavy-bottomed pot containing  oil up-to 2 inches.

6. Drop the chicken into the oil one by one in batches. Make sure you do not overcrowd it ( I fried 4 – 5 pieces at a time ). Fry on medium for 5 minutes turning sides in between.

7. Reduce heat and remove the chicken from the oil and place it on kitchen towels.

Fried chicken is ready to serve.
